You can set the printing temperature of PLA between 185 - 200℃, bed temperature to 60℃, and printing speed o 40 mm/s first; and the you can lower the bed temperature to 55 ℃ and rise printing speed to 60-100 mm/s after the first layer is done.
The easiest way to keep opened PLA filament in good condition is to put them back into vacuum bags with some desiccants around. Also you can have filament dry box to store your PLA filament. If your PLA filament absorbs too much moisture, it's better to use a filament dryer to heat and dry the filament.
It depends where you put the filament and how you store it. If you put it in a dry but ventilated room without direct sunshine to filament, it probably will last for 2 - 3 months. But if you get a humid environment, it won't last that long. It's advised to use opened filament in a month.
